    Glucose Syrup 42DE
    A transparent viscous syrup, with a sweet taste and neutral colour, produced by hydrolysing (breaking down) maize or wheat. It’s used to stabilise products by inhibiting crystallisation, while its high viscosity adds volume and gives chewiness to sweets.

    Glucose Syrup 63DE
    A transparent viscous syrup, with a sweet taste and neutral colour, produced by hydrolysing (breaking down) maize or wheat. More sugars are produced during manufacture, making it sweeter than 42DE and giving less water activity and lower viscosity. This increases its preserving qualities (shelf life) and provides greater body and mouth feel, particularly in beverages.

    Glucose Syrup 95DE
    A transparent viscous syrup, with a sweet taste and neutral colour, produced by hydrolysing (breaking down) maize or wheat. It’s predominately used in the brewing industry as a readily available source of fermentable extract.

    Brewer’s Sugar No.1
    This can be produced as a fully inverted (glucose-fructose mixture) syrup or seeded into a crystalline block. It’s 95% readily fermentable, with a subtle colour (25-35 EBC) and mellow flavour. It’s used in brewing lager and pale ale.

    Brewer’s Sugar No.2
    This can be produced as a fully inverted (glucose-fructose mixture) syrup or seeded into a crystalline block. It’s 95% readily fermentable, with an amber colour (60-70 EBC) and strong flavour. It’s used in bitter and strong ale.

    Brewer’s Sugar No.3
    This can be produced as a fully inverted (glucose-fructose mixture) syrup or seeded into a crystalline block. It’s is 95% readily fermentable, with a dark brown colour (120-140 EBC) and rich flavour. It’s used in mild ale, stouts and porters.

  • Caramelised Syrups

Ragus ships its sugars across the world, delivering on-time and in-full to customers across the brewing, baking, confectionary, and pharmaceutical industries

    These are produced by controlled heating of a sugar solution, at approximately 170°C. The sugar molecules break down, creating compounds that contribute to flavour and a very dark brown appearance – this process is called caramelisation. They’re used for colour and flavour development in dairy products, drinks, ice creams, puddings, savoury sauces and toffee. The required declaration for use in colour development is caramel E150a or Plain Caramel, and for flavour development is Caramel or Caramelised Sugar.
